Chicken Strawberry Salad for Two

This is a fantastic Chicken Strawberry Salad recipe. My favorite part about this recipe is the dressing. One time I switched the lime juice for some lemon drop Jones soda and it was great!

Salad Ingredients

2 chicken breasts, cooked & cubed
1 c. small seedless grapes (chopped in half)
3/4 c. diced celery
1/4 c. green onion chopped
1 med. avocado cubed
2 c. strawberries, sliced
1/3 c. almonds, (buy already sliced)
1 bag Lettuce leaves (the greener the better)

Dressing:

3/4 c. mayonnaise
1/2 tsp. salt
1/2 tsp. snipped fresh tarragon
2 Tbsp. lime juice

Directions:

1. Combine chicken, grapes, celery and green onion in a large bowl.
2. Mix mayonnaise, salt, tarragon, lime juice in small bowl.
3. Pour dressing from the small bowl over chicken mixture (in large bowl) and mix well.
4. Add chopped avocado and strawberries
5. Stir gently
6. Now layer into serving dishes, lettuce, salad mixture, sprinkled with almonds on top.

Honey Barbecue Chicken Tenders for Two

Here is an easy recipe for two that takes about 5 minutes to prepare and serve! Honey barbecue chicken tenders are a favorite in our household. I love them because they are so quick and go great with just about anything – mashed potatoes, a plate of steamed veggies, fruit, french bread, baked yams, and the list goes on. Obviously a great high-protein choice perfect for dinner. Here’s the 5-minute version I prepare:

  • Microwave about 10 chicken tenders on high for about 4-5 minutes or until well cooked (but not too dry!)
  • Slice into strips
  • Add a few tablespoons of honey barbecue sauce (or your favorite sauce)
  • Stir and serve

Easy Chicken Salad Recipe for Two

Salads are like a double-edged sword. They can either be bad for the body or super healthy. The key to a great healthy salad is using a healthy salad dressing and loading the salad with healthy ingredients. We make this salad for dinner every once in a while and we absolutely love it. It’s definitely one of my favorite easy recipes for two. It’s literally a perfect dinner since it’s low on carbs and high in protein – a perfect combo before you go to bed. Low carbs in the evening can help keep the belly fat off. The avacado and almonds in this recipe are also great for keeping slim. Try this out:

Chicken Salad

  • 1 large avacado chopped up
  • 2 large servings of spinach or baby herb salad mix (I love the baby herb stuff)
  • 1/2 cucumber
  • 2 handfuls of raw almonds (sliced or chopped)
  • 1 roma tomato
  • Healthy salad dressing
  • 2 servings of frozen chicken breasts (or tenders)

Heat up the frozen chicken for about 8 minutes in a covered container and it should be tender and well-cooked (make sure it’s all white, no pink). Simply mix up all the ingredients into two bowls and use your choice of salad dressing. Easy Recipes for Two: Mango Smoothies (Better than Jamba!)

Here’s another of our favorite easy recipes for two. These two mango smoothies you see below were fun to make and took us just a few minutes. I love the blend of tropical fruits. This smoothie has some mangos, banana, pineapple juice, and orange sherbet. The blend is awesome and I think you’ll agree it is better than Jamba Juice (try it to believe it). The hint of lime really added a good kick. The thing I like about this recipe is that the ingredients are so easy to find. Blend up the following ingredients and enjoy!

  • 1/2 cup pineapple juice
  • 1 cup orange sherbet
  • 1 banana
  • 2 cups mango, sliced
  • 2 cups ice
  • 1 teaspoon lime juice

If you’re looking for easy recipes for two, Hawaiian haystacks are super easy to make. Haystacks are basically a plate of rice with a creamy chicken sauce on top. You can then add any kind of toppings, which makes it a fun recipe. We’re all about healthy food too, and this is a very healthy (and tasty) one. Our kids love it too. Here’s a simple recipe that my wife and I use:

Ingredients:

  • Plenty of cooked rice
  • 1 can cream of chicken soup
  • 2 frozen chicken breasts
  • Sliced pineapple
  • 1 can mandarin oranges
  • Chopped carrots
  • LaChoy noodles
  • Any other tasty veggies

Preparation:

  • Microwave the chicken breasts on high for about 8 minutes – the meat should be white. Cut it into bite-size squares.
  • Mix the chopped chicken in with the cream of chicken soup & add a little water until it’s almost like a thick soup. Microwave this for a few minutes
  • Pour your creamy chicken sauce over rice and add toppings
